I made several different ones before deciding on that approach based on a mix of comprehensibility and aesthetic appeal. Subs over time is actually hard to visualize well. Total submission frequency over the history of a given promotion is easier, and I've got some nice interactive visualizations for that.

I made some graphs with time on the horizontal axis and submission frequency on the vertical axis for the UFC:

They show about what one would expect with regards to the most popular submissions in each organization over time. I also used a graph theoretical method to rate fighters from PRIDE, then graphed the top ones like this:

... the size of the light blue circle is relative to rating, links between fighters show who beat whom among the top fighters and the method by which they did so. Again, it shows things we might expect, for example that Big Nog beat every top fighter he fought, but just couldn't handle Fedor.
